Need a quick meal for dinner?? Grab that roast from the freezer and a few simple ingredients and dinner will be cooking in a jiffy!!
Roast (any cut, any size) (frozen or thawed)
Salt & Pepper
2 cups Water
Onion, chopped (Optional: can use minced onions or onion powder)
1-2 Garlic Clove, chopped
Potatoes, washed & quartered (your choice, red or russet)
Carrots (I use 1 pound baby carrots–they cook faster)
Season all sides of the roast with salt, pepper, and garlic powder. Sear all sides of the roast in a skillet on the stove (cast iron is the best). Once seared, place roast in crock pot. Return skillet to stove and add onion and garlic. You may add a small amount of butter or water. Cook about 5 minutes, then scrape pan into crock pot on top of roast.
Add approximately 1.5-2 cups water to crock pot. Cover and cook on high. Plan to cook (dependent on size of roast) about 4-6 hours.
About 1.5-2 hours before dinner time, add potatoes and carrots and allow to cook on high.
Check water level occasionally. You don’t want the roast to dry out or stick to the crock pot.
Roast should fall apart when ready to serve!
