Ice Cream for Breakfast

I LOOOOOVE ice cream. It’s one of my favorite desserts. I really love gelato and fruity types, so I have been dying to try this “breakfast ice cream”. Of course, I didn’t make mine for breakfast. I made it for dessert!! You can let your kids have it for breakfast EVERY morning and they will think they have the best mom ever.

First, you start out with a few bananas. I grabbed 5 so I would have a few servings, but you could use 2 for one serving.


Cut or break the bananas up into small chunks. Put them on a plate or in a container and freeze them for 2 hours. I let mine freeze over night and they got WAY too hard. If you freeze them over night, pull them out a little while before you start to make your ice cream so they aren’t so hard to blend.

I added a handful of chocolate covered strawberries I had hidden in the freezer.

I started to blend like a mad woman and NOTHING was happening. I stuck the spoon in the a few times trying to push the frozen fruit down, hitting the blade and scaring the ever loving crap out of myself. After that, I decided to toss in a heaping spoonful of Greek yogurt to give it a little “liquid”.

Of course, the yogurt didn’t work much and I just needed to let the bananas soften up a bit.

Blend, scrape, blend, scrape, voila!! Delicious, healthy ice cream!!

Of course, I made extra so I put a serving into a jar to save for later and shared the rest for my kiddos!!
