Despite the fact that I try to limit my children’s exposure to junk foods, we still struggle with my oldest to eat healthy. Even fruit can be a struggle some weeks with him. Right now, as we are in between fruit seasons (apples are kinds mushy and summer fruits are too pricey), bananas are one of the few decent and cheap fruits. Unfortunately, my picky one has been giving me grief about eating them.
We were in the grocery store earlier this week and my kids saw frozen chocolate dipped bananas and really wanted a box. There was no way I was going to pay for such an easy treat, so I promised we’d make some at home. We had actually made them years ago but they didn’t remember.
Instead of using plain melted chocolate which can be a pain and takes awhile to harden, we made magic chocolate. It was easy, fun, cheap and my two older kids loved it!
Here’s what you need to make your own:
2 cups chocolate chips (we used dark chocolate 60% chips)
4 tablespoons coconut oil
Toppings (we used sprinkles, crushed pretzels and coconut shreds. Other ideas chopped nuts, sunflower seeds, granola, crushed cereal….)
Peel bananas and cut into three or four pieces each. Stick each with a skewer and put in the freezer.
Melt the chocolate chips in a double boiler. Once melted, add the coconut oil and stir until combined. Pour into a pint sized jar and let cool to room temperature.
While you’re waiting, prepare your toppings!
Once banana are nice a cold or frozen, dip them one at a time and roll in toppings. Don’t wait too long to do this! The chocolate hardens very quickly.
Keep the extra chocolate in the fridge, but let it come to room temperature before using. The coconut oil will cause the chocolate to harden when it’s cold.
